- 3-4 lb beef chuck roast
- 2 tablespoons olive oil beef tallow
- Pepper and salt as desired
- 1 large onion chopped
- 4 cloves of garlic minced
- 3 large carrots peeled and chopped
- 2 cups of beef broth or bone broth to add depth
- 2 tbsp tomato paste
- 1 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
- 2 sprigs of rosemary fresh or thyme or 1 teaspoon dried
- Optional alternative: red wine or check out the the recipe for chuck roast without wine
- 3-4 potatoes for an even more full Pot roast
Tips: If following a keto chuck roast recipe remove the potatoes and carrots, or substitute the celery root and radish or turnips.
