  • 1 block of firm tofu Pressed for 15 to 20 minutes to get rid of excess water. Then it is crumbled.
  • ¼ cup vegan mayonnaise - for a creamy classic texture.
  • 1 tbsp Dijon mustard - adds tangy depth.
  • 2 tablespoons of nutritional yeast Nutsy cheesy flavor, and B-vitamins.
  • 1 teaspoon black salt kala Namak - key for the "eggy" flavor.
  • ½ teaspoon turmeric to get gold-yellow color.
  • 2 stalks of celery cut finely and adds crunch.
  • 2 tablespoons chopped either chives or green onions for freshness.
  • Salt and pepper - according to your taste.
  • Alternate garnish: paprika dill parsley, chopped pickles.

Step-by-Step Instructions

    Step 1: Press & Prep the Tofu

    • Place the tofu on an unclean kitchen towel or press tofu and press for a minimum of 15 minutes. This ensures that the tofu does not saturate your salad. Once it's drained, you can crumble it by hand or using with a fork until it looks like chopped eggs that have been boiled.

    Step 2: Make the Creamy Dressing

    • A small mixing bowl mix in vegan mayonnaise Dijon mayonnaise, nutritional yeast and black salt pepper, and turmeric. Adjust the seasoning according to your preference (more black salt to give your egg a more distinct flavor or more mustard to give it tang.

    Step 3: Combine the Ingredients

    • Add the tofu crumbled, celery and green onions to the bowl of a large size. Pour the dressing over them and gently fold the ingredients together until everything is evenly coated.

    Step 4: Chill Before Serving

    • Refrigerate and cover for 30 minutes in order to allow flavors to blend. The salad will become smoother and more flavorful after cooling.
