Ingredients
  

  • 10-14 pounds The whole turkey spatchcocked
  • 2 tsp salt Kosher
  • 1-2 tablespoons black pepper
  • 2-1 tablespoons olive oil or butter that has been melts
  • 2 tablespoons of garlic powder
  • 2 tsp the spice paprika
  • 1 teaspoon fresh rosemary and 1TBSP fresh rosemary and thyme (optional)
  • Slices of onion lemon and other herbs to roast on the bed

Instructions:

  • The oven should be heated up to 425° F (220degC). This intense heat will give the most crisp skin for the spatchcock turkey.

Spice the Turkey

  • Rub it in all directions with olive oil, salt pepper, salt and additional herbs. Allow it to cool down to a temperature of the room for approximately 30 minutes prior to roasting.

Created to the Roasting Pan

  • The base portion of the roasting pan is filled with onions, garlic, as well as other plants. Set up an aluminum rack above it and then set the bird that has been spatchcocked over it, skin side down.

Roasting The Turkey

  • If you're making 12 pounds of turkey, the time to cook the spatchcock for this bird is between 75-90 minutes.
